My take on stroganoff. Savory beef, mushrooms and onions in a sour cream based sauce

Ingredients
  • 2 lbs beef cubed (chuck roast, rib roast/steaks, etc.)
  • 1 lb Sliced mushrooms
  • 1 large onion, diced
  • 1 qt beef stock
  • 4 cubes beef bouillon
  • 8 oz sour cream
  • 1 tsp fresh ground pepper
Instructions
  1. Brown beef in heavy bottom pan (Dutch oven works great) on high heat
  2. Reduce heat to medium and add mushrooms and onions. Cook until onions are translucent and mushrooms are soft.
  3. Add beef bouillon cubes and stock. Reduce heat and simmer for 1½ hours until beef is tender
  4. Add sour cream and simmer for 15 minutes until sauce slightly thickens
  5. While sour cream is simmering, cook egg noodles according to package instructions
  6. Once noodles are cooked, add to sauce and stir thoroughly
  7. Plate and enjoy

A very easy and yummy breadstick

Ingredients
  • 1½ C 120 F warm water
  • 1 T instant yeast
  • 2 T sugar
  • 1 t salt
  • 2 C bread flour
  • 2 C All-purpose flour
Instructions
  1. In an electric stand mixer with the dough hook, combine water, yeast, sugar, salt and one cup of flour.
  2. Slowly add flour until dough clears the sides of the bowl and makes a ball on hook.
  3. Continue kneading for three minutes. Dough should be soft and slightly sticky.
  4. Let dough rest in the bowl for 10 minutes.
  5. Heat oven to 400 degrees F.
  6. On a lightly floured pastry mat or counter-top, pat the dough into a long rectangle
  7. Cut the dough into 1" wide strips with a pizza cutter.
  8. Place strips on parchment lined cookie sheet.
  9. Lightly coat with olive oil or butter and you choice of seasoning (dried herbs, kosher salt, garlic, etc.)
  10. Let rise for 20 minutes
  11. Place into oven and bake until slightly brown (about 15 minutes).

Ingredients
  • 1 small cabbage, core removed and shredded
  • 1 bunch of green onions, chopped
  • ½ C dried cranberries
  • ¾ C mayonnaise
  • ¼ C apple cider vinegar
  • 3 T brown sugar
Instructions
  1. Mix vegetables and cranberries in large bowl
  2. Mix apple cider vinegar and brown sugar in a small bowl
  3. Microwave vinegar and sugar for 30 seconds to help dissolve sugar
  4. Add vinegar/sugar and mayonnaise to vegetables
  5. Mix well
  6. Refrigerate for 1 hour

Easy and very tasty coleslaw. Try it on your favorite pulled pork sandwich or with some fried fish.

Ingredients
Dressing
  • ⅓ C Mayonnaise
  • 1 T Apple Cider Vinegar
  • 2 t Brown Sugar
  • 1½ t salt
  • 1 t black pepper
Vegetables
  • 3 Carrots
  • 1½ bunches green onions
  • 1 head red cabbage
Instructions
  1. In a medium sized bowl, combine dressing ingredients and set aside
  2. Grate the carrots
  3. Slice green onions into ¼" pieces
  4. Quarter the cabbage and remove the core
  5. Thinly slice cabbage into shreds
  6. Add vegetables to dressing and combine thoroughly

Ingredients
  • 4 Large sweet potatoes, cubed
  • 1⁄2 C white sugar
  • 2 eggs, beaten
  • 1⁄2 t salt
  • 4 T butter, softened
  • 1⁄2 C milk
  • 1⁄2 t vanilla extract
  • 1⁄2 C brown sugar, packed
  • 1⁄3 C all-purpose flour
  • 3 T butter, softened
  • 1⁄2 C pecans, crushed
Instructions
  1. Preheat oven to 325 degrees F (165 degrees C). Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash.
  2. In a large bowl, mix together the sweet potatoes, white sugar, eggs, salt, butter, milk and vanilla extract. Mix until smooth. Transfer to a 9x13 inch baking dish.
  3. In medium bowl, mix the brown sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.
  4. Bake in the preheated oven 30 minutes or until the topping is lightly brown.

Ingredients
  • 2 C flour
  • 3½ T baking powder
  • ½ t salt
  • ½ t cream of tartar
  • 1 T honey
  • ½ C cold butter cut into small chunks
  • ⅔ C milk
Instructions
  1. Preheat oven to 450F
  2. Place dry ingredients in a food processor to combine.
  3. Add butter and pulse about 10 times.
  4. Dump into a mixing bowl and add the milk and honey. Stir until it comes together.
  5. Place on a lightly floured surface and knead until not sticky to work the gluten
  6. Roll or pat the dough to about ¾ inch thick.
  7. Cut them with a biscuit cutter, a tin can or a glass. Try not to twist to keep layers separate.
  8. Bake for 10 minutes or until golden brown.
  9. Brush with butter right after they come out of the oven.
  10. Bake 10 minutes or until they are a nice golden brown.

 

Sushi Rice

Ingredients
  • 2 cups sushi rice
  • 2 cups water
  • 3 tablespoons rice vinegar
  • 4 tablespoons sugar
  • 1 tablespoon kosher salt
Instructions
  1. Rinse rice in cold water, 3 to 4 times. Drain fully
  2. Add rice and water to rice cooker and cook according to manufacturer's instructions.
  3. While rice is cooking, mix remaining ingredients. Stir until sugar dissolves.
  4. Once rice is cooked, pour into large mixing bowl. (The larger, the better. You want enough room to allow the rice to spread out so it can cool.)
  5. Pour rice seasoning (vinegar, sugar and salt concoction) over rice.
  6. Gently mix seasoning liquid into rice trying to evenly coat every rice grain
  7. Set aside and allow to cool to room temperature.

 

Crockpot Macaroni & Cheese

My attempt at a crockpot (slow cooker) macaroni and cheese

Ingredients
  • 16 oz. elbow macaroni
  • 4 cups milk
  • 12-oz. can evaporated milk
  • 8 oz. cream cheese, cut into 1-inch pieces
  • 3 cups shredded cheddar cheese
  • 8 oz cubed ham
  • 1 T dry mustard
  • 1 T hot sauce (Tobasco or Frank's)
  • 1 t smoked paprika
Instructions
  1. Spray a large crockpot liberally with cooking spray
  2. Combine the macaroni, evaporated milk, milk, cheeses, ham, mustard and hot sauce in the crockpot.
  3. Sprinkle with paprika.
  4. Cover and cook on low heat until noodles are done (about 2½ hours).
  5. Stir the mixture and serve hot.

Ingredients
  • 3 lbs Red Skinned Potatoes
  • ½ pound bacon, cooked and crumbled
  • 6 green onions, chopped
  • 2 ribs celery , chopped
  • 2 tablespoons diced pimiento, drained
  • ¾ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup mayonnaise
  • ½ cup sour cream
Instructions
  1. Cut potatoes into ½" cubes
  2. Boil potatoes until cooked through (about 15 minutes)
  3. Combine all ingredients except potatoes in bowl
  4. Add potatoes to dressing
  5. Place in refrigerator for a couple hours (minimum) until chilled through

 

Orange rice and bean salad

Ingredients
  • 1 C uncooked white rice
  • Grated orange rind from ½ orange
  • 3 T orange juice
  • 1 T red wine vinegar
  • ½ t salt
  • ¼ t pepper
  • 2 T olive oil
  • 15 oz can black beans drained and rinsed
  • 2 green onions, chopped
  • 2 T cilantro, chopped
Instructions
  1. Prepare rice according to package directions
  2. Whisk together orange rind, orange juice, vinegar, salt and pepper.
  3. Whisk in oil
  4. Combine rice, beans, green onions and cilantro
  5. Pour vinaigrette over rice combination and mix well
  6. Serve at room temp
